A cheese with a strong personality that preserves the aromas of pristine herbs, obtained from whole goat's milk coming from the hinterland and from wild grazing farms in Sardinia, a land full of wide, green spaces. Characteristics Cylindrical shape, flat sides and slightly convex rind. The rind has the characteristic black and/or brown colour, smooth and thin. Semi-cooked pulp, white or slightly straw yellow, compact or with small holes. The sweet and aromatic taste and the intense aroma, together with the quality of the milk, make it one of the most valuable products of OP Unione Pastori. Ingredients Goat milk, salt, kid rennet, lactic ferments. Maturation Minimum 50 days. Conservation The product maintains its optimal characteristics (chemical-physical, microbiological and organoleptic properties) if kept at a temperature of +4°/+8°C.
