A cheese of great character that has preserved its typical characteristics for thousands of years, obtained from whole sheep's milk from farms in the wild in Sardinia, a land rich in wide and green spaces.
Semi-cooked cheese. Cylindrical shape, flat faces and straight sides. The rind is striped, straw-yellow in colour. White pulp tending towards straw yellow, compact with sparse holes, consistent. The aromatic and pleasantly spicy flavor make it one of OP Unione Pastori's most valuable products.
Sheep milk, salt, calf rennet, lactic ferments.
- Fresh: minimum 30 days.
- Semi-matured: 120 days.
- Matured: 210 days.
The product maintains its optimal characteristics (chemical-physical, microbiological and organoleptic properties) if kept at a temperature of +4°/+8°C.
